FISHWORKS LOLO MUSSEL RECIPE
We are so excited that local restaurant, Fishworks, shared their mussel recipe with us. we have made it twice already and can definitely say its worth replicating.

WHAT YOU WILL NEED
1 pounds fresh honey mussels, remove the beard from the mussels,
clean and wash, find any mussels with open shells
2 stalks of lemongrass , remove the outside one or two layer.
Remove the end (root end) . Use a knife to minced
Half small Ginger , Scrape the edge of the spoon against the ginger to peel off the skin. Use a knife to minced
2 Tablespoons vegetable oil
1 shallot, peeled and finely minced
2 garlic cloves, finely minced
1 jalapeños, sliced
1 cup fresh Thai basil, julienne
1 1/2 cups coconut milk
Juice from 1 lime
Teaspoon brown sugar
1/2 cup of white wine
1 cup chicken stock
In a large stockpot set over medium heat
Combined lemongrass, shallot, ginger, and garlic. Cook it for 3 minutes. Add jalapeño, brown sugar and fresh basil and cook it for another 2 minutes. add the wine and reduced Add lime and coconut milk and chicken stock
Add mussels, cover, and increase heat to high.
Cook until all mussels are open, about 5 minutes.
